Healthy banana, date and walnut bread

Not only is banana bread a great way to get rid of those over-ripe bananas that would otherwise be thrown out, but it tastes delicious! This healthy version is sweetened using maple syrup and dates, rather than refined sugars. It also contains walnuts for a boost in those essential omega-3 fatty acids. For a lunchbox friendly version, simply remove the walnuts or try substituting them with seeds (pepitas, sunflower seeds etc). This recipe can even be stored in the freezer for up to 1 month, making it the perfect lunchbox solution!
